Chef’s Table: Pic-A-Lilli Inn

Mas Meatloaf 
Serves 6-8

Ingredients: 

3 lbs. ground beef
1 lb. ground Italian sausage
2 tbsp Worcestershire sauce
1 tbsp each of Italian seasoning, garlic powder, salt and black pepper
2 tbsp each of ketchup, mustard and brown sugar
2 large eggs
4 slices of white bread soaked in milk
6 slices of bacon
½ Vidalia onion diced and cooked with 2 tbsp of brown sugar

Dice and sauté onion with 2 tbsp brown sugar. Once softened, set aside to cool. Mix first 9 ingredients together, form a loaf, place into oven-safe pan. Wrap meatloaf with bacon, bake at 400º F for 1 hour. Remove from oven.

For glaze: Mix 2 tbsp each of ketchup, mustard and brown sugar to make a glaze. Brush on top of loaf. Return to oven and cook for an additional 15 minutes.
