Serves 4

Sriracha pickle relish

½ cup
pickle juice

1 lemon

1 tsp
honey

1?8 tsp
garlic, minced

to taste
sriracha chili sauce
pickles

Guinness beer-battered onion rings

1  medium white onion

½ pint
Guinness beer

½ cup
tempura mix

2-3 cups
cooking oil

Burgers

2 lbs
Black Angus ground chuck

4 slices
Wisconsin sharp white cheddar cheese

1  tomato
sliced

4  leaves
romaine

1 Kaiser roll, toasted

to taste
salt and pepper

Method:

To make sriracha pickle relish, combine pickle juice, juice of one lemon, honey, garlic and sriracha sauce. Cut the pickle into half-inch cubes and add to the mix.

To make Guinness beer-battered onion rings, cut onion into rings. Mix Guinness and tempura together and coat the onion rings in the batter. Pour oil into a pan so it is deep enough to cover the onions, and heat to 350 degrees. Deep fry the rings until golden brown in color. Take out and allow to dry.

To make burgers, shape ground chuck into 8-ounce patties and grill to desired temperature. Right before desired temperature is achieved, place cheese on burgers and finish cooking. Place burger on toasted Kaiser roll and dress with sriracha pickle relish. Place lettuce, tomato slices and onion rings on top and enjoy.
