My Mom Mom’s roast beef dinner – complete with potatoes, green beans, salad and her strawberry shortcake for dessert. From regular weeknight dinners to special occasions like my birthday, this was the meal I always requested and she would happily make, without question. She passed in 2006 and I miss her (and her cooking) more and more every day – she was the best grandmother, friend and chef I’ve ever known.

A BLT consisting of a big fat Better Boy Jersey tomato, burnt bacon, lettuce, mayo on white Wonder bread, toasted. Plus white corn roasted on the grill and Maryland Blue Claw crabs, cleaned, and of course a glass of local wine.

I would eat all things peanut butter: peanut butter and jelly sandwich, Snickers, Reese’s – you name it. I’m allergic to peanut butter and have never tasted it, so if it’s going to be the last thing I eat, I may as well enjoy.

It would be my mom’s lasagna with her mixed salad at her dining room table, because it’s a labor of love. My mom often shows her love through cooking. I know when she prepares a meal it also includes fun, heartfelt conversation.

It would be Lumpia. I grew up in a military family and we lived in Guam for awhile, where my mother learned to make Lumpia. She would make it for us even after we returned to New Jersey, and it was always a favorite because it brought back great memories of our childhood. To this day, it is so hard to find good Lumpia.

South Jersey produces some of the best fresh produce in the country. My last meal would include blueberry muffins, sliced jersey peaches and tomatoes with prosciutto, burrata cheese and balsamic vinegar, fresh corn on the cob, a filet mignon from a local butcher, topped off with a delicious Provencal style Rosé wine from one of SJ’s amazing wineries. PS: Ice cream for dessert!! PPS: France, eat your heart out!

An absurd amount of sushi, a beer, seaweed salad and gyoza. I considered going with chicken parm but I gotta stick with sushi – there’s more variation, different textures and flavors. What’s not to love about sushi, am I right?
