Chef’s Table: Pizza Amore

Serves 4

1 22 oz
ball of pizza dough

1 large roasted red pepper

2 tomatoes

8 oz
pizza sauce

¾ cup
black olives, sliced

¾ cup
pepperoni, sliced

¾ lb
mozzarella, shredded

¼ cup
scallions, chopped

to taste
garlic, olive oil, fresh basil, salt, black pepper, flour

Preheat oven to 450 degrees. Marinate red pepper in garlic and olive oil, then marinate tomatoes in olive oil and basil, seasoning with salt and black pepper.

Stretch dough until it reaches 16 inches in diameter, then place on a floured pizza peel. Spread the sauce evenly around the stretched dough, staying a half-inch from the edge. Spread the shredded mozzarella evenly on the pizza. Repeat this with every ingredient, being sure to cover the entire pizza. Top the pizza with chopped scallions. Cook pizza for 15 minutes or until crust is golden brown and the cheese is completely melted.
