The Italian Sandwich

Makes 1 Sandwich

Ingredients:
2 extra large eggs
1 pinch Pecorino Romano cheese
1 pinch salt
1 pinch pepper
2 large chicken breast tenderloins
Seasoned breadcrumbs
2 tbsp extra virgin olive oil, divided
2 large garlic cloves (diced)
1 bunch broccoli rabe (chopped)
1 10″ Italian roll
1 thin slice of sharp provolone

 

Method:
Crack eggs into a small bowl, add a pinch of grated Pecorino Romano cheese, salt and pepper and whisk. Coat each tenderloin with the egg mixture and then cover with breadcrumbs. Heat a frying pan, add 1 tablespoon of olive oil and lightly fry the tenderloins. Remove tenderloins from pan, add the rest of the oil and cook the garlic. Then add the broccoli rabe and sauté for about 3 minutes, making sure the ingredients don’t burn.

 

To Assemble:
Cut the Italian roll open longways and add the lightly fried tenderloins. Evenly place the sautéed broccoli rabe and garlic on top. Cover with the cheese slice. Place the sandwich in the oven and bake until cheese is melted.
