3 eggs
3/4 cup sugar
8 tbsp butter, melted
2 tsp vanilla extract
1 tsp lemon zest
1 3/4 cups all purpose flour
2 tsp baking powder


Whisk eggs and sugar in a medium-sized bowl for 2-3 minutes. Add melted butter, vanilla extract and lemon zest. Stir.

In 2 batches, Sift flour and baking powder, then fold into egg mixture until just combined. Repeat with the second half.

Grease Pizzelle maker and place a spoonful of dough each. Close lid for about 25 seconds.

Transfer cookies to a baking rack (to make sure it gets crispy!)
