Exotic Fruit and Coconut Dumplings for Christmas

Ingredients:

1 cup dried apricots

1 cup shredded coconut

1 cup almond meal

1 tablespoon coconut oil; melted

1 teaspoon vanilla bean paste

2 tablespoons honey

1/2 cup desiccated coconut

Directions:

1. Place the apricots, shredded coconut, almond meal, coconut oil, vanilla bean paste and honey into the bowl of a food processor and pulse until the mixture is coarse and well combined. Add a little water, a teaspoonful at a time if the mixture is too dry to shape into balls.  

2. Shape tablespoon amounts of the mixture into 1” balls and roll in the desiccated coconut until coated. Serve the balls immediately or refrigerate in an air tight container for up to 7 days.
