The best remedy for a cold day is some warm and cozy food. At least, that’s how FOX29 meteorologist Kathy Orr likes to deal with the cool weather. These are her five go-to meals when the temperatures drop.
Butternut Squash Soup
Homemade Eggplant Rollatini
Chinese Takeout from Tres Yan Wu (Spring Rolls and Grandfather’s Chicken, to be exact)
Homemade Applie Pie with Whipped Cream
Mom’s Breakfast Casserole (Check out the recipe – typed decades ago – Kathy’s mom used to make this family favorite)
Ingredients:
6 eggs
2 cups milk
1 tsp. salt
1 tsp. dry mustard
pepper to taste
1 lb. pan sausage cooked and drained
6 slices diced bread
2 cups cheddar cheese grated or shredded
Butter the bottom of a 13 x 9 baking dish. Place ½ of the bread cubes in the bottom of dish. Sprinkle ½ of the cheese and ½ of the sausage over bread. Repeat making a second layer with remaining ingredients. Beat eggs and mix with milk, mustard salt and pepper. Pour egg mixture over baking dish evenly. Let stand in refrigerator at least 1 hour or overnight if you wish. Bake in 350º oven for 40-50 minutes until light brown and bubbly on top.
